This is one of those recipes that can be anything you want it to be – breakfast, lunch or dinner. It’s super easy to make and absolutely delicious.

I added pulled pork to the bean mixture to make it a little more hefty. And I used crumbled mozzarella cheese instead of feta since that’s what I had on hand. I also added some pre-made salsa to the salsa mixture because I didn’t have a ton of fresh tomatoes to devote to the cause.

Really it’s all about what you have on hand. Like I said, this dish can be almost anything you want to make it.The texture of the corn tortilla combined with the beans/meat, the spicy salsa and the sunny-side egg fresh off the griddle…

Yum. I’m getting hungry just writing about it.
