Yes, another breakfast recipe. Which is really crazy because I am not a breakfast person. At all. Except for maybe the weekends when I have plenty of time to make breakfast and enjoy it.
But this recipe has helped with my lack of weekday, breakfast zeal. Even when we’re running out the door and breakfast is the last thing on my mind, I can grab a few of these for us. They are easy to make and keep very well in the fridge or freezer. Eat them cold, warm them up. They are tasty (Matt will attest) and healthy. Oatmeal, dried fruit, nuts = a quick & easy, filling breakfast… to go.
I’d say that’s a complete win.
